Dans le Noir ? Paris awarded Ecotable label, France's first sustainable catering label
Since June 2020, the Dans le Noir ? Paris restaurant's eco-responsible approach has been rewarded, and the establishment is proud to have achieved the 3 macarons (maximum level) of the Ecotable label!
Ecotable is the French label for sustainable catering, identifying and rewarding eco-responsible restaurants based on precise specifications. The label measures the ecological consistency of restaurants and awards one, two or three Ecotable badges, depending on their degree of eco-responsibility. Ecotable restaurants commit to a long-term approach that respects the environment and human health.
What does the Ecotable level 3 label mean?
Level 3 certification illustrates that the restaurant is "an example for all". It certifies that 50% of its products come from organic farming (for us, that's a big plus, as 80% of our products are organic!) or from sustainable sources, that it does not offer endangered fish species on its menu, and that its meats are 100% French.
In addition, the Ecotable level 3 label indicates that the restaurateur, beyond his culinary approach, sorts and valorizes his bio-waste, that he uses green energy and ecological cleaning products, and that he implements a zero waste policy in his establishment.
The Ecotable label also takes into account the social aspect of the establishment, as part of its additional criteria for highlighting an establishment's eco-responsible approach. Dans le Noir ? is not only an extraordinary culinary experience, it has also been a human adventure since its creation. Reassessing our perception of taste while reclaiming our senses, re-enchanting our relationship with the world and with others, and experiencing a surprising encounter with difference - this is the group's leitmotiv. Indeed, over 50% of our staff are severely disabled, and the establishment receives no government assistance.
The initiatives taken by Dans le Noir ? and rewarded by this label are aimed at limiting the ecological impact of its establishment, promoting short supply chains, highlighting organic products and their producers, as well as the social dimension of this unique concept.
